Prof H L (Riëtte) de KockProf H L (Riëtte) de Kock  is an Associate Professor at the Dept of Food Science, University of Pretoria.  Her research focuses on the sensory properties of food and drink as these contribute to Nutrition and Well-being of consumers in sub-Saharan Africa.  Research priorities include the need for food product development to meet the demands of a growing and more urbanized African population in transition, the exploration of the richness of sensory experiences in foods from Africa’s bio-diverse food sources; and the tailoring of sensory properties of foods to make them not only nutritionally adequate but also appealing and appetizing.
