Nathalie MartinNathalie Martin earned a Ph.D in Sensory Science from AgroParisTech, the leading French institute for education and research in Life Sciences, Food Technology, and Environment. She started her career in academia as an Associate Professor of Sensory & Consumer Science at AgroParisTech. Her research interests were the physical, chemical, and cognitive determinants of sensory perceptions and pleasantness. In 2003, she joined the Nestlé Research Center in Lausanne, Switzerland. Today, her research team focuses on the role of perceptual, psychological, social, and environmental factors in the development and maintenance of health-related behaviours, with the goal of providing solutions for healthier diets while ensuring a satisfying eating experience.
